Once the coffee arrives at the processing facility, it is placed in water to remove floaters and cool the fruits. Subsequently, it undergoes selection, followed by fermentation in the fruit in plastic tanks. Within 48 hours, it is pulped, and once pulped, it is fermented in tanks for another 48 hours. After fermentation, it undergoes three washes and is then dried in a solar drying facility for 7 days. Finally, it is stored for 15 days for stabilization.

We produce coffee while respecting the environment, on volcanic soil and protected by misty forests. We cultivate a range of varieties, starting from the first one introduced to the country, such as the yellow-tipica variety, and including yellow, red, and pink bourbons, as well as caturra, Castillo, Tabi, and Geisha. We carry out processing methods including washed, honey, and natural processes. The farm is situated between 1650 and 1870 meters above sea level.
